Simple mouth watering Aubergine recipe

Ingredients;
1/4 cup extra virgin olive oil
1 teaspoon apple cider vinegar,
1 tablespoon mustard of your choice,
A couple splashes of soy sauce or tamari,
salt to taste,
2 large aubergines chopped into cubes
Instructions;
Preheat the oven to 180 C / 356 F and butter a shallow oven-proof dish
1 . Mix the extra virgin olive oil, apple cider vinegar, mustard and soy sauce in a bowl
2 . Add salt to taste
3 . Add about a quarter of the aubergine at a time into the mixture , and mix as you keep on adding the remaining aubergine. Mix Until i's all well incorporated.
4. Pour the mixture into the shallow oven-proof dish and bake for 25 minutes.
You can serve it as a salad or appetizer
